Honey Walnut Oatmeal Cake

Ingredients:

  • 1 cup Organic Fields Australian Rolled Oats (100 g)
  • 1 cup water
  • ½ cup all-purpose flour (80 g)
  • 2 tbsp Organic Fields Cashew Spread (60 g)
  • 3 tbsp Organic Fields Raw Honey (40 g)
  • 1 tsp baking powder
  • ½ tsp Organic Fields Ceylon Cinnamon Powder
  • 1 pack Organic Fields Walnuts (50 g)
  • 1 egg

Cooking Method:

  1. Chop the walnuts into small pieces and set aside.
  2. Combine the rolled oats with water and let them soak while preparing other ingredients.
  3. In a bowl, mix the flour with baking powder and cinnamon powder.
  4. In a blender or mixing bowl, combine soaked oats, flour mixture, cashew spread, raw honey, and egg. Blend or mix until smooth and well combined.
  5. Stir in half of the chopped walnuts into the batter.
  6. Pour the batter into a greased or lined baking pan and sprinkle the remaining walnuts on top as a garnish.
  7. Bake at 200°C for 18 minutes or until a toothpick inserted comes out clean.
  8. Drizzle with a little extra honey before serving for added sweetness and shine.
