Matcha Crunchy Buttons
Makes: 20-25 cookies
Total Time: 25 minutes
(15 minutes preparation + 10 minutes baking)
Ingredients
For the Dough:
- 125g butter (room temperature)
- 15g Organic Fields Monk Fruit Sweetener
- 1 egg + 1 egg yolk
- ½ teaspoon milk powder (e.g., Nutritious DM)
- 1½ cups flour
- ½ teaspoon baking powder
- 1 tablespoon Organic Fields Matcha Powder
For the Filling:
- ¼ cup Organic Fields Instant Oats
- 30g white chocolate
- (zero sugar is a healthier option)
- 1 tablespoon Organic Fields Matcha Powder
Cooking Method
- Prepare the Dough: In a mixing bowl, cream the butter and Organic Fields Monk Fruit until light and fluffy. Add the egg and yolk and milk powder, mixing well after each addition. In a separate bowl, sift together the flour, baking powder, and Organic Fields Matcha Powder. Gradually mix the dry ingredients into the butter mixture in three parts, combining until no dry specks remain.
- Form the Cookies: Scoop small portions of dough using a teaspoon and place them on a baking tray lined with parchment paper. Preheat the oven to 175°C. Bake the cookies for 6-8 minutes until the edges are slightly golden.
- Prepare the Filling: Toast the Organic Fields Instant Oats in a dry frying pan over medium heat until lightly browned and fragrant.
- Assemble the Cookies: Once the cookies are cooled, pipe or spoon a small amount of filling onto half of the cookies and sandwich them with the remaining cookies. Serve and enjoy!
